The 5 meals for spring

Spring is one of the times we enjoy the most, we have more free time to share with the family, and more opportunity to eat rich, healthy food without regrets. Organizing afternoons where roast meat and vegetable and salad accessories are the protagonists can be the best choice to spend unforgettable days. We share some meals for spring.

Fish with coriander pesto

Pesto: Blend 1 small clove of garlic, 1⁄2 cup of fresh cilantro, 1 tablespoon of olive oil, salt and pepper to taste. Place 220g of white fish fillet in a baking dish and put the pesto on top. Bake for about 12 minutes until the fish is cooked. Serve with 1 cup of cooked vegetables.

Vegetable omelet

Finely chop chives and mushrooms, add to a couple of beaten egg whites. Spray a frying pan with vegetable oil and cook the mixture. Serve it with a flake of mascarpone cheese.

Cactus Salad

Mix 1 cup of chopped and cooked nopales, 1 tablespoon of chopped onion, chopped cilantro, 1 teaspoon of olive oil for salad dressing, salt and pepper to taste. Accompany it with one and a half palm-sized portions of tuna, chicken or tofu up to 180g.

The grill will be your salvation

Discover the flavor of grilled vegetables. Lightly spray the grill with extra olive oil and slide a halved onion onto it. Take advantage of vegetables such as porccini, pumpkin, eggplant, and peppers. You can add nopales, carrot slices and green beans. In addition to that you can grill; fish, shrimp and cuts of meat as well as poultry on the grill.

Gazpacho CWP

Look in the previous posts for this refreshing recipe, here I give you a summary: Blend 3 fresh, ripe tomatoes, along with 1 chopped cucumber, 2 cloves of garlic, ½ pepper and 70g of whole wheat bread crusts. Add a thin thread of extra virgin olive oil while all the ingredients are blended, emulsifying the mixture. Then add the juice of one lemon, salt and black pepper, sprinkle a little cumin powder. Serve it and enjoy it cold. Go ahead and enjoy these days of sun and heat, hydrating yourself with plenty of water, you can add mint, ginger and citrus to complement the soft drinks.
