The ingredients
225 g short grain rice (raw weight). 2 tablespoons of rice vinegar. 🥄 ½ cucumber. 🥒 3 sheets of nori seaweed. 150g thinly sliced smoked salmon, cut into long strips. 🐟 2 teaspoons wasabi paste. 🥄 A small bunch of chives. Tamari Sauce To Serve. Japanese salad. 200g frozen edamame beans, thawed. 2 carrots, cut into long, thin matchsticks. 🥕 2 scallions, cut into long, thin strips. 🔪 8 radishes, thinly sliced 2 tablespoons tamari sauce 1 tablespoon rice vinegar Juice of ½ lime 1 clove of crushed garlic (optional) A few drops of liquid artificial sweetener. 2 teaspoons of white or black sesame seeds. 🔥 *
Instructions:
- Cook rice according to package instructions; It will take 10 to 15 minutes until it is smooth and all the water has been absorbed. ⏲
- Add the rice vinegar, cover the pan and let sit until the rice is at room temperature. 🔥
- Peel the cucumber, then cut it in half lengthwise and discard the seeds. Cut each cucumber half along its length into long, thin strips. 🥒 4.Place the nori sheets, shiny side down, on a bamboo sushi mat (if you have one) or work surface covered with plastic tape. 5.Divide the cooled rice between the sheets, spreading it evenly but not to the edges. Leave a 1cm border along the length.
- Place the salmon slices on top of the rice and sprinkle with the wasabi paste. Add the long cucumber strips and chives. 🔪
- Using the plastic tape and sushi mat (if you have one) to help you, lift the long bottom edge of each nori sheet over the smoked salmon filling and roll it up, pressing firmly as you do. 8.-When you get to the top, you may need to brush it lightly with water to seal it. Repeat with the other sheets to make 3 rolls. 🤓
- Let rest, wrapped in plastic, for at least 10 minutes or chill in the refrigerator until ready to serve.
- Meanwhile, make the Japanese salad: Mix the edamame beans, carrots, scallions, and radishes in a bowl. 🥕
- In a small bowl or jug, whisk together the tamari sauce, vinegar, lemon juice and garlic (if using).
- Sweeten to taste with artificial sweetener and add sesame seeds. Use to dress the salad.
- Just before serving, slice each sushi roll into 8 rounds. Serve with the Japanese salad and a little tamari sauce. Enjoy!
