Raspberry crepes - CWP style

*Ingredients

60 g of normal flour* A pinch of salt* 1 medium egg* 150 ml of light milk* Spraying oil* 100 g of raspberries4 tablespoons of 0% fat Greek yogurt* 2 teaspoons of powdered sugar* *Mint to decorate

Preparation1. Make the crepe dough: Mix the flour, salt, egg and a little of the milk until smooth. Add the remaining milk, little by little, until you have a soft dough. Pour it into a container and let it sit for at least 10 minutes.

2. Lightly spray a small nonstick skillet with oil and place over medium heat. When it’s really hot, pour a quarter of the mixture into the pan and tilt to swirl the dough and coat the base. Cook for about 2 minutes until the crepe is set and golden on the bottom, then flip and cook on the other side. 3. Slide the pancake from the pan onto a plate and keep it warm while you cook the rest of the crepes in the same way. 4. Place each crepe on a warm plate and fill with raspberries. Fold it over and serve immediately with a dollop of yogurt and a dusting of powdered sugar.
