Ingredients 1 bottle (750ml) red wine 2 cups water 1 cup sugar 4 star anise 8 medium pears with stems Preparation In a cast iron pot or Dutch oven, heat the wine, sugar and star anise until it boils. Stir well so that the sugar dissolves. Meanwhile, peel the pears but leaving the stem. With a small knife, remove the heart. Place pears in wine mixture. Bring to a boil. Cover and heat over low heat for 10 to 15 minutes until the pears are tender but retaining their shape. Place the pears on a plate. Discard star anise. Heat the wine mixture to a boil again. Cook for 20 minutes (uncovered) so the liquid thickens. Reduce it to 1 ½ cup. Cover the pears with the mixture and refrigerate for 6 hours up to 3 days. You can add a little honey when serving.
