Green papaya salad
I don't blame them, even for me it was an acquired taste. But this green papaya salad is another story. A very rich one!
Few things like salads with fruit or sweet and sour. THEY ARE MY FAVORITES. For me, they are the definition of the word FRESHNESS. And this is one of my favorites. Many people don’t like papaya and generally can’t find a way to eat it, but they want to do so because of its high fiber content. I don’t blame them, even for me it was an acquired taste. But this green papaya salad is another story. A very rich one!
Ingredients
1 green papaya 1 carrot 3 limes, juiced 1 tablespoon fish or soy sauce 2 teaspoons coconut sugar 1 inch ginger knob finely grated 2 teaspoons sesame oil (optional) ½ bunch of chopped cilantro
Instructions
Use a julienne knife or spiralizer to make papaya and carrot ‘noodles’. Whisk together the lime juice, fish sauce, coconut sugar, fresh ginger, and sesame oil. Add the noodles to this sauce and let them sit for at least 30 minutes before serving (but not too long). Mix it with the cilantro just before serving. Eat this salad with tofu, fish or chicken for a complete meal, topped with chili and crushed peanuts.
