Ingredients
• 60 gr. feta cheese, cubed** • 15 gr. sun-dried tomatoes, diced* • ¼ teaspoon dried basil** • ¼ teaspoon dried oregano** • 1 tablespoon olive oil** • ¼ teaspoon garlic powder** • 2 teaspoons lemon juice** • 4 cups mixed green leafy vegetables** • 30 gr. sliced almonds** • Salt and pepper to taste
Preparation
1. Combine the feta cheese, sundried tomatoes, herbs and 2/3 of the olive oil.* 2. Toss gently to coat the feta cheese in the herbs and oil.** 3. Allow the feta cheese to marinate while you wash and prepare the vegetables and almonds.** 4. In a large bowl place the vegetables and top with the feta cheese and almonds.** 5. Drizzle the olive oil and lemon juice over the vegetables and toss to coat.** 6. Season with salt and pepper to taste!
