CWP Recipes: Refreshing Gazpacho

Today we share a very healthy CWP recipe: Refreshing Gazpacho.
Ingredients:
- 3 very ripe fresh tomatoes, (the reddest they can get).
- 1 chopped cucumber
- 70g whole wheat breadcrumbs
- 2 cloves of garlic
- 1 bell pepper
- Pepper
- Salt
- tablespoons of olive oil
- White vinegar
- Cumin
Preparation:
- Blend the fresh and ripe tomatoes together with the chopped cucumber and garlic cloves, the pepper and the whole wheat bread crusts.
- Add a thin thread of extra virgin olive oil while all the ingredients are blended, emulsifying the mixture.
- Then add the juice of a lemon, salt and black pepper, sprinkle a little cumin powder.
- Serve it and enjoy it cold.
