CWP Recipe: Lentil Tacos

If you want to try something new, instead of good old lentil soup, try this delicious lentil tacos recipe. Also works for parties

The lentils are delicious, nutritious and very popular at all times of the year. If you want to try something new, instead of good lentil soup, try this delicious recipe of lentil tacos. It also doubles as holiday food. 😉

Lentil tacos8 tacos

Size of the serving: 2 tacos234 calories per serving

Ingredients:

• Olive oil in aerosol. • 1 cup of dried lentils or 2 cups cooked lentils. • 1/2 cup of chopped onion. • 2 teeth of chopped garlic. • 1/2 cup of chopped peppers (a mix of peppers and jalapeño if you want it spicy).

  • * • 1/2 cup of tomatoes cut in half. • 1 teaspoon of chili powder. • 1/2 teaspoon of cumin. • 1/2 teaspoon of garlic powder. • 1/2 teaspoon of smoked paprika. • 8 tortillas six inches or lettuce leaves. • Optional: avocado, cilantro or salsa.

Instructions

  1. Prepare the lentils according to package directions or use ready-to-cook lentils.
  2. Add the onions, garlic and peppers in a large skillet lightly coated with olive oil over medium heat. 3.-Saute for about 3-5 minutes or until the onions begin to soften. 4.-Then add tomatoes, spices and 2 cups of lentils and leave them for 3-5 minutes. 5.-Heat the tortillas, and fill them with the lentil stew you just prepared. 6.-You can add avocado, salsa, cilantro, etc.
