Asian style salmon and sweet potato

Ingredients

  • 2 salmon fillets
  • 1 bunch of broccoli
  • 1 small sweet potato
  • 2 teaspoons of sesame seeds
  • 1 teaspoon coconut oil
  • 1 teaspoon sea salt

Sauce

  • 2 teaspoons sesame oil
  • 1/4 cup tamari sauce (or your favorite soy sauce)
  • 2 teaspoons of grated ginger
  • 1 teaspoon minced garlic
  • 2 tablespoons sesame seeds
  • 1 tablespoon of honey

Method

Preheat the oven to 200 ° C. Chop the sweet potato into slices (1-2 cm thick). Arrange on a lined baking sheet, leaving room for the salmon and broccoli, and drizzle with coconut oil. Sprinkle sesame seeds and sea salt. Heat in the oven for 25 minutes. Meanwhile, make the sauce by combining all the ingredients in a bowl and whisking until combined. Remove the semi-cooked sweet potato from the oven and add the broccoli to the tray. Drizzle everything with coconut oil and salt. Place two salmon fillets in the middle of the tray, surrounded by broccoli and sweet potato, and drizzle with sauce. Bake it for 12-15 minutes. Remove the cooked salmon, broccoli and sweet potato from the oven. You can serve it with brown rice if you like 🙂 Bon Appetit!
