Christmas salad Ingredients: 820 g of large natural peaches without shell, in pieces 5 red apples, cored and in pieces 500g of natural light yogurt 1 can of condensed milk 50% less sugar Preparation: Mix the fruit in a large salad bowl. Separately, mix the yogurt with the condensed milk and cover the fruits with it. Cover and refrigerate before serving. 3. Mosaic gelatin Ingredients: 1 package (170 grams) of light lemon, strawberry, grape, pineapple flavored gelatin 1 can of evaporated milk 80% less fat 3 envelopes of gelatin 15g each 1 can of milk jug 50% less sugar 1 glass of plain water Preparation: Prepare the lemon, strawberry, grape and pineapple jelly according to the instructions on the package. Pour it into a flat container and put it in the refrigerator for several hours until all the flavors set. With a knife, cut the lemon and strawberry jellies into cubes of approximately two centimeters per side. Mix the evaporated milk, the milk jug and the water and heat without boiling. Add the previously hydrated gelatin. Let the mixture cool. Place the previously curdled cubes in a gelatin mold and then add the milk mixture with gelatin. Place in the refrigerator until completely set 4. Light chocolate mousse Ingredients: 125 grams of dark chocolate (with at least 70% cocoa) Low-calorie almond milk 3 egg yolks 4 egg whites 3 tablespoons of powdered sweetener (sucralose, aspartame) 75 grams of light margarine A pinch of salt Preparation: Chop the dark chocolate and put it in a saucepan over high heat soft so that it dissolves together with the skimmed milk. When the chocolate has melted, we will add the light margarine, also chopped. Meanwhile, we beat the egg whites until stiff and add a pinch of salt to counteract the sweetness. When the milk and chocolate mixture cools, add the egg whites until stiff, being very careful not to cut the foam, stirring little by little. When the tone of the mixture (which should be spongy) is homogeneous, let it rest and divide it into four containers. Let it cool and put it in the refrigerator for at least two hours. 5. Strawberry shortcake Ingredients: 2 eggs 6 tablespoons of powdered sweetener (sucralose, aspartame) Grate the crust of ½ orange ½ cup of wheat flour Strawberry leaves to decorate (optional) For the filling: 1 ½ cup of low-fat Camembert cheese The grated rind of ½ orange 2 tablespoons of powdered sweetener (sucralose, aspartame) 2 cups of strawberries cut in half 4 tablespoons of fresh cheese ½ cup of chopped toasted almonds Preparation: Preheat the oven to 190°C. Grease a 30x20cm mold and cover with baking paper. In a bowl, beat the eggs, sweetener and orange peel until the mixture reaches a mousse texture. Add the wheat flour and mix well. Pour it into the mold. Bake 15 to 20 minutes or until dough springs back when gently pressed. Put it on a metal rack, remove the paper and let it cool. Meanwhile, to make the filling, mix the camembert cheese with the orange peel, sweetener and fresh cheese. Divide the mixture between two bowls. Chop half of the strawberry halves and add to one of the bowls of the filling. Cut the cake widthwise into three equal pieces and paste them again with the strawberry filling. Spread two-thirds of the simple filling on the sides of the pie and add the toasted almonds. Spread the rest of the filling over the top of the cake and decorate with the rest of the strawberry halves, and their leaves, if desired.
