Ingredients: 120g whole wheat pita bread 4 tablespoons tomato sauce 50g red and yellow pepper strips 100g mushrooms, thinly sliced 50g low-fat mozzarella cheese, thinly sliced Freshly ground black pepper 40g smoked ham slices 80g red cabbage leaves Instructions: 1- Preheat the oven to 240°C, and place a tray metal baking pan on this one. 2- Spread the puree on each pita bread, scatter the peppers in strips and the mushrooms. Cover with the mozzarella slices. 3- Place the ‘pizzas’ on the hot oven tray and cook in the preheated oven for 8-10 minutes, until the bases are crispy, the mushrooms turn brown and the mozzarella has melted. 4- Grind some black pepper over the pizzas and top with the prosciutto and cabbage leaves. Serve immediately. Variations: Substitute vegetables for peppers, mushrooms, zucchini and eggplant, spinach and capers. Vegetarians can omit the prosciutto so add some extra vegetables, plus an additional 15g piece of mozzarella. One more option… Avoid ordering and eating pizza with heavy bases, prefer that your base be thin and crispy. A base of about 110 g (one serving) has approximately 350kcal, without counting r the calories of the ingredients.
