Coconut kefir is a probiotic-rich drink that works as a starter culture for fruits, vegetables, juices, sauces, condiments and many other foods. Why it’s good for you: Kefir is one of the easiest ways to get good probiotic nutrition into your daily life and is a refreshing drink any time of the day or night. INGREDIENTS (organic where possible) • 2 L coconut water • 1 cup kefir culture METHOD

  1. Place the coconut water and kefir in a glass container, stir with a wooden spoon. Be sure to leave some space between the liquid and the top of the jar in case the liquid bubbles and expands during fermentation.
  2. Secure the lid, leave it to ferment for 24-48 hours. Notes * • You can purchase kefir starter cultures at health food stores or online. • Kefir should be without detectable sweet taste. In warmer climates, it will ferment within 24 hours and for colder climates, it will take 48 hours for the bacteria to consume all the sugar.
