Falafels are a wonderful option for vegetarians or vegans, they are rich in protein, easy to prepare and also incredibly delicious. These healthy falafels have the added benefits of turmeric and kale and are also baked instead of fried, which is a healthier version of the original, but still delicious. Ingredients
1½ cups cooked chickpeas 2 tablespoons pistachios 1 teaspoon turmeric 2 kale leaves, stemmed 1 teaspoon curry powder 2 tablespoons chopped cilantro 2 tablespoons chopped basil 1 teaspoon baking powder 2 teaspoons buckwheat flour 1 teaspoon lemon juice 1 teaspoon olive oil ½ teaspoon salt 2-3 tablespoons sesame seeds
Instructions
Place all ingredients in a blender until the mixture is well combined but still has some texture. You may need to stop and scrape the edges a couple of times to make sure everything is mixed well. Line a baking sheet with parchment or baking paper and lightly spray it with olive oil. Shape the mixture into golf ball-sized balls and place them on the baking paper. Use your palm to flatten them slightly so they cook evenly. Once you’re done with the batter, sprinkle the falafels with sesame seeds and bake for about 15 to 20 minutes, turning once. The falafels will be lightly browned when done. Enjoy!
