Guilt-Free Nachos – CWP Style
Nachos can be high in calories in their more traditional preparations. Here's a lighter version so you don't harm your diet...
Nachos can be high in calories when piled high on a plate with melted cheese, guacamole, and sour cream. We’ve made a lighter version by using healthier tortilla chips and topping them with tasty low-fat ground beef and low-fat cheese. Serves: 4 people** Calories: 400 kcals** Dish suitable for those on the CWP diet in steps 3 and 4
Ingredients 100 g of low-calorie tortilla chips (Susalia) * 100 g of grated reduced-fat cheese** * A handful of cilantro, chopped** * 1 red or green chili, thinly sliced** * 4 pitted black olives, cut into thin slices** * 4 tablespoons of 0% fat Greek yogurt*
For spicy minced meat
- Spray oil** * 1 small onion, finely chopped** * 2 cloves of garlic, crushed** * 2 red chilies, cut into cubes** 300 g extra lean minced meat* * 1 teaspoon ground cinnamon** * 1.5 teaspoons ground coriander 1 teaspoon ground cumin** * 2 tablespoons tomato puree** * 1 x 400 g chopped tomatoes** * 1 x 200 g beans, rinsed and drained** * 300 ml beef broth** * Salt and freshly ground black pepper
Preparation1. Prepare the spicy minced meat: Lightly spray a saucepan with oil and place over medium to low heat. Cook onion and garlic for 4 minutes, stirring occasionally, until tender. Add the chili and ground spices and cook for 1 more minute.
2. Add the ground beef and cook for 4-5 minutes, stirring, until golden brown. Add the tomato puree, canned tomatoes, beans and broth, and bring to a boil. 3. Reduce the heat and cook for 15-20 minutes until everything is cooked and the sauce has reduced to a thick consistency. Season to taste with salt and pepper. 4. Heat a grill over high heat. Spread the tortilla chips on a baking sheet and sprinkle with three-quarters of the grated cheese. *Pour the spicy meat on top, leaving gaps so you can see some of the nachos. Sprinkle with the sliced chili, black olives and the rest of the cheese. 5. Cook over low heat for about 5 minutes until the cheese is melted, browned and bubbly. 6. Divide the preparation among four plates and serve with the chopped cilantro and a spoonful of yogurt. Enjoy this nutritious nachos recipe and prepare other healthy meals!
